Delectable Candied Bacon Ice Cream

You need an ice cream maker for this recipe!!

(Makes 1 1/2 Quarts)

Ingredients:

10-12 strips bacon (I like the center cut, it’s less cholesterol and very tasty)

light brown sugar for sprinkling

6 tbl butter

10 eggs, yolks only

5 1/2 C half & half

1 1/2 C brown sugar

1/2 tsp vanilla extract

Pre-heat your oven to 400 degrees.  Lay the bacon strips either on a foil lined pan or a baking rack on a tray, sprinkle with brown sugar to coat.  Place in oven and bake for about 15 min (keep an eye on it since different bacon cooks at varying times), take out and flip the bacon coating it in the brown sugar syrup that will have formed around it.  Place back in the oven and bake until a dark brown but not burnt at all, between 5 and 15 more minutes, let cool.  In a saucepan heat the butter, once melted add the 1 1/2 C brown sugar and half of the half and half.   Put the remaining half and half in an ice bath for later.  In a new bowl whisk together the egg yolks and while whisking gradually add some of the hot brown sugar mixture to tempure the eggs, then pour the egg mixture back into the saucepan.  Cook over low heat constantly stirring until the mixture forms a custard and will coat a spatula.  Pour the custard through a strainer into the half & half in the ice bath, stirring the whole time.  Place in the fridge until well chilled and then process with your ice cream maker per manufacturer’s directions.  When the ice cream is close to complete chop the bacon strips into small bits and add them into the mixture.  Voila, delectable dessert.
